Bengali are famous all over the world for their tasty dishes. They cook the simple dishes in such a way that the people who eat it will lick their fingers. In this article I am going to write about the Bengali vegetarian recipes of top Bengali veg dishes. As soon as we hear about Bengali, we imagine fish but not only do they cook fish and meat in a tastier way, they do cook vegetarian dishes in a fantastic way.  Bengali Vegetarian Dishes :


Sukhto is one of the most popular and healthy Bengali vegetarian dishes.

Ingredients: Bitter gourd, mustard seed paste, black cumin seeds, potato, turmeric powder, salt, sugar, ghee.

Preparation process: *Cut bitter gourd into two halves, cut potato too. Make paste of mustard seeds.

*Wash potato and bitter gourd. Add turmeric powder, salt, and sugar. Marinate it.

*Add mustard oil in the pan. Fry the potatoes and bitter gourd. Keep it aside.

* Add little more oil in the pan. Add black cumin seeds. After some time, add the fried bitter gourd and potatoes. Add mustard seed paste. Mix it well.

*Add water and close the lid.

* Before taking it out of the stove, add ghee.

*Sukhto is ready.

Ingredients: Raw banana, salt, sugar, turmeric powder, potato, bay leaf, red chili powder, gram flour, cumin seeds.

Preparation process: * Boil the raw banana by adding little bit of salt. Peel it. Smash it well. Add turmeric powder, salt, sugar and gram flour. Make laddoo of these mixtures. Fry it in refined oil.

* Cut potatoes.

* Add cumin seeds, bay leaves and dry chili in the oil. Fry it for some time. Add potatoes. Mix it. Add cut tomatoes, salt, sugar, turmeric powder. After sometime, add onion and garlic paste.

*Add water accordingly. When the potato is cooked, add fried laddoo of banana.

*Before taking it out from the stove, add garam masala and ghee.

Ingredients: Gram flour packet, onion and garlic paste, potato,cumin seeds powder, dry red chili, bay leaf, tomato, salt, sugar, chili powder, ghee.

Preparation process: * Put little bit of oil in the pan. Put the gram flour. Stir it. Make it reddish brown. Add water in such a way that paste is formed. Put the paste in the steel plate. Dry it and cut it into pieces.

* Put refined oil in the pan. Fry the pieces of gram flour which you have just prepared. Take it out in a different plate.

* In the oil add onion and garlic paste. Add potato. Mix it well. Add cumin seed powder. Dry chili, bay leaf and fry it for a while. Add tomato, turmeric, salt, sugar, chili powder. Cook it for a while and put water. After the potato is cooked, add the fried pieces of gram flour. Before taking it out, add ghee and garam masala before you take it out off the flame.

Doi Baigun is one of the tasty and delicious Bengali vegetarian dishes. It is really mouth watering dish.

Ingredients: Big round brinjal, salt, sugar, turmeric, yoghurt, mustard seeds paste, black cumin seed, bay leaf, tomato, garam masala, black pepper powder.

Preparation process:* Cut the brinjal into large pieces. Wash it. Marinate it by adding salt, sugar and turmeric. Fry it in refined oil.

*Mix mustard seed paste and yoghurt in a small dish.

* In the pan, add oil. Add black cumin seeds, bay leaf. Fry for some time. Add mixture of yoghurt and mustard seed paste. Add 2-3 tbs of sugar, salt. Make gravy of it. Add tomato. Stir it well. Add fried brinjal. Stir it well. Add 1 cup of water. Cook it in open pan. Before taking it out from the stove, add garam masala and black pepper powder.

Potol sorsa bata is another one among tasty Bengali vegetarian dishes.

Ingredients: Pointed gourd, mustard seeds, poppy seeds, black cumin seeds, chili, potato, turmeric, salt, sugar, yoghurt.

Preparation process: * Peel the pointed gourd and cut the two ends. Cut potato. Prepare paste of mustard seeds and poppy seeds.

* Add black cumin seeds, green chili and potato in the oil. Fry it for some time and take it out in different dish.

* In the same oil, add pointed gourd. Add turmeric, salt and sugar. Stir it well. Add mustard seeds paste, poppy seeds paste. Add yoghurt. Stir it and cook it for some time. Add little bit of mustard oil. Allow it to cook for 5 minutes. Add fried potato. Cook it for some time. Add 1 cup of water. Make the flame low and cook until pointed gourd and potatoes are cooked well.

Ingredients: Soyabean, potato, chili, garlic, ginger, onion(chopped), tomato, garam masala, cumin seeds, coriander leaves, chili powder, bay leaf, dry chili.

Preparation process: * Put soya bean luke warm water. Soak it for some time. Take it out from water by squeezing it properly.

*Put oil in the pan. Add salt, potato. Fry the potato well. Add soyabean. Stir it well. Add turmeric. Make it light brown. Keep it aside.

* Put oil again. Add bay leaf, dry chili, cumin seeds. Stir it. Add chopped onion. Add all the spices. Stir it again. Add garlic, ginger and chili paste in it. Stir again. Cook for some time. Add tomato. Cook it. Add the fried potato and soyabean. See that the mixture is absorbed by soya bean. Add little water to make gravy. Before taking it out from the stove, add garam masala.

Ingredients: Ribbed gourd, yellow lentil, potato, tomato, chili, ghee, turmeric, cumin seeds, bay leaf, dry chili.

Preparation process: *Add oil in the pan. Put potato. Fry it. Add salt, turmeric. Take it out in another pan.

* In the same oil, add bay leaf, cumin seeds and dry chili. Fry it. Add yellow lentil (boiled). Fry it. Add ribbed gourd. Fry it again. Add potato, chili, tomato, turmeric, salt and mix it. Add little bit of water. Keep the flame low for 5 minutes and cover the lid. Check if the lentil is cooked. Add 1 tbs of sugar and ghee. Stir it well.

Preparation process: * Peel the colocasia esculenta. Cut it into halves. Put it in water.

* In a pan, heat mustard oil. Add potato, salt, turmeric powder. Fry until it turns light brown. Take it out in different dish. Add colocasia esculenta and fry it. Keep it aside.

* Add little more oil. Add dry chili, cumin seeds, carom seeds, ginger paste, salt, tomato paste and also green chili, coriander powder, red chili powder, cumin powder. Fry it until oil separates. Add yoghurt. Mix it well.

*Add fried potato and colocasia esculenta. Mix it well. Cover it in low flame. Add water and let it boil. Add garam masala and chopped coriander leaves. Cover the lid.

Preparation process: *grate papaya in grater.

*Add oil in the pan. Put potato and fry it. Put turmeric and salt. Mix it well and fry until it turns reddish brown. Keep it aside.

*In the same oil, add cumin seeds, dry red chili, bay leaf, tomato, chili and stir it well. Add turmeric powder, salt. Let it cook well.

*Add the grated papaya. Mix it well for some time. Cover the lid for 1 minute. Mix it well and add fried potato. Stir it. Put little bit of water and cover the lid. Cook it well. Add sugar. Stir it. Add 1 tbs of ghee.

Preparation process: * In a pan, add oil. Add onion, garlic paste, turmeric, coriander powder. Mix it well and add water. Add red lentil. Stir it well. Cover the lid for 2 minutes. Then add basella leaf (poi saag). Mix it well. After 3 minutes, add water. Cover the lid, cook it well. Add tomato. Cover the lid. Mix it well. Add green chilies, coriander leaves. Stir it well.
